Following sold-out seasons of The Truffle Degustation and The Caviar Degustation this year, Bacchus Head Chef Massimo Speroni has announced the ultimate celebration of Queensland seafood to honour the
Award-winning restaurant’s FIFTH birthday – The Queensland Coast Degustation.
It’s the Degustation that tastes like Queensland, a carefully curated seven-course culinary exploration of the magnificent Queensland coastline! Created to celebrate the fifth birthday of Bacchus Restaurant, The Queensland Coastline Degustation will be available from THIS Thursday November 23, through to the end of this year ONLY and shines the light on some of the most famous flavours and places in Queensland:
· Oyster – freshly shucked rock oysters from Moreton Bay with finger limes and soy
· Cuttlefish – Stradbroke Island cuttlefish with Queensland mango, lime and chive
· Scallops – lightly charred Hervey Bay scallops with smoked saffron potato
· Crab – Moreton Bay crab with champagne spheres and basil pesto
· Ravioli – Moreton Bay tiger prawns, goldband snapper with crescenza cheese and lemon
Bug – grilled Moreton Bay bug with chardonnay Sauce
· Dessert – a lasting memory
· Petit Fours from Bacchus
The Queensland Coast Degustation can also be accompanied with paired wines or with continuous Ruinart ‘R D Ruinart Champagne and runs alongside the suite of acclaimed degustation experiences at Bacchus, testament to the restaurant’s commitment to continually create new and exciting dining experiences. The cost is $179 per person or $254 with paired wins or $329 with continuous Ruinart ‘R D Ruinart Champagne.

ABOUT HEAD CHEF MASSIMO SPERONI
After a global search, celebrated Italian flavour maker and fine dining specialist Massimo Speroni joined the multi-award winning Bacchus in January this year. He flew in direct from the 2 Michelin-starred restaurant San Domenico in Imola, Italy where he was Sous Chef, working with owner-chef Valentino Marcattilii. He also worked with Chef Marcattilii in his formative years as a Chef de Partie and Junior Sous, and credits the famed Italian chef for much of his flavour preferences now. He brings with him star-studded experience – having worked at the 1 Michelin-starred restaurant Café le Paillotes in Pescara, under Chef Consultant the acclaimed Heinz Beck from the 3 Michelin-starred La Pergola. At the opening of the five star Romeo Hotel in Naples he worked under Chef Andrea Aprea and for the high summer season of 2014, he was Head Chef at the Hotel Monte Del Re’s fine dining restaurant.
Massimo’s food leans towards fresh, clean and light classically created dishes. Since joining Bacchus he has also introduced a new layer to the overall menu and dining experience – a Raw & Share Menu, essentially a starter menu to begin the culinary adventure.
