TOAST TO WORLD MOONSHINE DAY WITH CAPE BYRON DISTILLERY’S ‘PACIFIC MOONSHINE’

Tropical and salty like your first post-surf sip, ‘Pacific Moonshine’ is the lovechild spirit of the highly-awarded Cape Byron Distillery and craft brewing legends Stone & Wood. To celebrate World Moonshine Day on June 5th, enjoy this unusual spirit with soda, some refreshing pineapple juice, or try your hand at a cheeky cocktail.

If you’re not familiar with this quirky spirit, let us take you back to how this little sipper came about. When COVID-19 first hit Australian shores, Stone & Wood bought back their kegs that were unable to be sold as pubs and bars closed around the country, resulting in a surplus of beer. Not ones to sit idly by and see delicious beer go to waste, Cape Byron Distillery saw an opportunity to create some ‘sustainable’ magic with their fellow Northern Rivers pal. The result? A clear spirit that was artfully distilled twice from kegs of fresh Stone & Wood Pacific Ale.

Bursting with flavours of tropical fruits such as fresh pineapple, lychee, passionfruit and mango, along with hints of malt on the nose. The taste is citrusy and dry with a medium to long finish.

Co-Founder and Distiller of Cape Byron Distillery, Eddie Brook says, “Sustainability and regeneration efforts are in our DNA. Over 30 years ago my parents bought a rundown dairy farm in the Byron Bay hinterland and planted 40,000 native subtropical rainforest trees. Today, our Distillery is perched in the heart of this thriving and lush ecosystem. Supporting local community regeneration is at the core of what we do, so making this peculiar ‘beer spirit’ with Stone & Wood was a no brainer.”

He continues, “So to celebrate World Moonshine Day, which aptly coincides with World Environment Day, we have teamed up with CAPI to offer a ‘Moonlight Paloma Bundle’, so everyone has the chance to experience this sustainable tipple. The bundle will include Pacific Moonshine, CAPI grapefruit soda and ingredients to prepare a fresh ‘Moonlight Paloma’ cocktail. We’re also excited to mark this occasion by donating $15,000 to the inGrained Foundation – a national not-for-profit also based in the Northern Rivers, who support grassroots environmental and social charities.”

This year, the inGrained Foundation has identified two grant categories to fulfil clear environmental and social needs within the Northern Rivers Community – ‘Conservation of natural resources and habitats’ and ‘Action on climate change’. Cape Byron Distillery is proud to be supporting these grants, as their passion for regeneration and conservation is at the core of what they do.

MOONLIGHT PALOMA
Ingredients:
30ml Pacific Moonshine
Top w/ Capi Grapefruit Soda
Squeeze of Lime
Method:
Build in a Tall glass over ice & stir.
Garnish with Grapefruit Zest (& Cinnamon Myrtle Leaves – optional).


JUNGLE BUSH BIRD
Ingredients:
45ml Pacific Moonshine
10ml Campari
20ml Pineapple Juice
10ml Lime Juice
10ml Sugar Syrup
Method:
Shake w/ ice & strain into ice-filled Old Fashioned glass.
Garnish with Kaffir Lime Leaf

MOONSHINE COLADA
Ingredients:
60ml Mac. Liqueur
15ml Pacific Moonshine
60ml Pineapple Juice
30ml Macadamia Milk
Method:
Shake w/ ice & double strain into Tall ice-filled glass.
Garnish with Dehydrated Pineapple Slice & Pineapple Leaf
